Meatloaf Cupcakes

I haven't tried this one yet (not a big meatloaf fan), but I think that our son would love it. I'm going to make these and freeze them for quick kid-friendly dinners. Fortunately he prefers veggies to meat, so with a fresh vegetable on the side and a glass of milk - seems like a fun and easy meal.


1 pound lean organic ground beef
1/2 cup seasoned bread crumbs
1 cup grated organic monterey jack cheese
3 tablespoons organic ketchup
1 egg
1/2 teaspoon celery salt
1/4 teaspoon pepper

Mashed potatoes, organic

Heat the oven to 375 degrees. Line 12 muffin tin cups with foil bake cups.
In a large bowl, mix together all of the meatloaf ingredients until well combined.
Divide the mixture evenly among the lined cups (about 3/4 full).
Bake cupcakes for about 15 minutes or until cooked through. Top with mashed potatoes.
