Basic Roasted Pork Loin

This is more of a technique than a recipe. The herbs are optional, I've made it with just garlic and soy sauce. I had no idea how simple roasting a pork loin was until I tried it. It's a nice break from the usual.


1 (1-pound) boneless pork loin roast, trimmed
3 rosemary sprigs, divided
4 large thyme sprigs, divided
4 sage sprigs, divided
2 tablespoons finely chopped garlic
1/4 cup low sodium soy sauce

Rinse and pat pork dry, and season with 1 1/2 teaspoons black pepper. Combine soy sauce and garlic in a ziplock bag. Add pork, seal bag and marinate in the refrigerator for 30 mins, up to 8 hours.

Preheat oven to 350 degrees. Spray baking pan with olive oil. Place pork loin in pan. Mix herbs with a touch of oil and place on top of pork. Roast until an instant-read thermometer registers 140 to 145°F, 45 minutes or so (temperature will rise 5 to 10 degrees as it rests). Transfer pork to a cutting board and let rest 15 to 25 minutes. Slice and serve.
